摘要: 为研究金属食品包装容器内涂层在高温条件下是否存在风险,对比了金属食品包装容器内涂层在不同浸泡条件中的游离甲醛、游离酚、高锰酸钾消耗量及双酚 A 的迁移情况,并结合美国安全性评价方法,计算日累积暴露量。 结果表明:高温条件(121 ℃ / 30 min)下的检测结果均高于标准迁移条件(95 ℃ / 30 min)下的结果;并且大部分高温条件下的检测结果高于标准限值要求,特别是游离甲醛和高锰酸钾消耗量的日累积暴露量比较高。 虽然目前金属食品包装容器内涂层在使用前按卫生标准检验合格,但金属容器在实际使用过程中需要经历高温灭菌工艺,高温条件下涂层迁移出来的有害物质会迁移到食品中,从而影响到人的身体健康,因此,由高温灭菌工艺过程带进的风险不容忽视。

Abstract: This paper makes a study on the internal coating of metal food packaging under high temperature conditions to see if any potential risks exist. By comparison of the consump tion of free formaldehyde, free phenol and potassium permanganate as well as the migration of bisphenol A( BPA) of the internal coating of metal food packaging under different soaking con-ditions, the safety evaluation method of USA is applied to calculate the estimated daily intake (EDI). The results show that the test results at high temperature (121℃/30 min)are higher than that of the standard requirements of the migration conditions(95℃/30 min). Moreover,the test results obtained under a large rang of high temperatures are higher than that of the standard requirements, especially the EDI of the free formaldehyde and potassium permanga-nate consumption is higher. Although the intemal coating of the metal food packaging is tested to be qualified according to hygienic standard before application, the metal container needs to undergo high temperature sterilization, thus the harmful substances might migrate into foods and impose threats to the health of people.Therefore, the risk of high temperature sterilization process can't be ignored.
